Try-It Tuesday Cloud Bread 

If you are on Pinterest you have seen cloud bread. You have been curious about cloud bread. If you haven’t well let me tell you about cloud bread. Haha! I found this link Cloud Bread and decided that I should try it for something a little different than my normal 3 hour bread baking weekend ritual. It seemed like an easy enough task. 


I had all the ingredients ready to go! 

The one thing I didn’t do was pull out the hand mixer and well my results will tell you that I shouldn’t have been lazy! 


I think I did those egg whites some justice with my elbow grease though. Haha! Stuck them in the oven and well magic happened. 


They actually looked the way I thought they kind of should. They aren’t quite as fluffy as I was hoping hence I needed the hand mixer. 


But upon escape from the oven and a proper cooling phase I was very happy with the taste and thus I will definitely be trying this recipe again! I wish I could describe it properly it tastes like bread just a super light version. Nothing heavy about it at all. These didn’t last long in my house at all.

Try It Tuesday Pork Edition 

We are a pork household. We love pork and all enjoy cooking it as well. Our smoker has seen better days so I had to try my hand at fixing a pork butt in the oven. 


That is how it turned out. A 7 pound butt cooked for 5 hours at 200 degrees covered in tin foil and then for 2 hours at 350 with the foil removed. I covered it with some homemade rub. The seasoning was excellent. We honestly missed a little bit of the smoky flavor that we get when we do a traditional butt in our smoker but overall excellent flavor and this just proves that you can cook a piece of meat as long as you have some heat and the time. 

My husband then made these amazing pulled pork sandwiches. 


Layer pork, BBQ sauce, a fried egg and some pimento cheese. Trust me the flavor is out of this world!

Yo’ Mama!

Yesterday was Mother’s Day! This weekend, I got to spend some amazing time with my son and some great time with my mama! I’m a lucky lucky lady!

I will talk more about the weekend and the amazing food we had on another day but right now I wanted to talk about my mom!

She is a gorgeous lady! I’m not just saying that because everyone thinks that we look alike but because I really think she’s beautiful, inside and out! She always thinks of others and she loves us with all of her heart.

She is a super smart lady! She went back to school later in life and she got an Associate’s Degree, a Bachelor’s Degree and then on to get her Master’s Degree! All as an adult. I’m so stinking proud of her. And I will admit, when I was younger, I didn’t realize how smart she was, or maybe I was just too stubborn to admit it, but now I definitely realize that she is a super smart chic!

She is a funny lady! She has a great sense of humor and she has an infectious laugh that she got from my grandpa and then so lovingly passed along to me. She can find the funny in a moment when the stress is overwhelming for others. She likes to make others laugh and bring out the best in all of our family.

She let’s me be me! She celebrates who I am. She appreciates the fact that we are totally different. My mom is shy and she is not the first to walk into a party and get people talking. I am the complete opposite. I never met a stranger and I love to be the center of attention, in a good way I promise 😉 She has told me how much she loves that part of me, and she encourages me to learn more about myself and embrace the things about me that sometimes I don’t understand. She knows when something is wrong simply by the sound of my voice, the same when something is great!

She is an amazing Neena! She loves her grandson so much and she has helped to raise him to be the amazing kid that he is. She gives her time and attention to him whenever he needs it and she is so quick to help with anything for him that he might need or want. It’s really amazing how much she loves that kid! I can even forgive not always being first anymore since he was born!

Simply put, I think you are awesome Mommy! I love you so much! You are an amazing human being and I’m so lucky to call you my mom! Happy Mother’s Day!

Yes even I can actually follow a recipe!

ID-100282398One of my favorite things about cooking is changing recipes. I love to taste something and think of how I can make it better or change it. I make happy noises when I eat good food, and I have perfected a full face that my boyfriend and my family find amusing. But yes food and cooking are by far on my list of great loves. It is very rare for me to actually try a recipe without changing it, but in the spirit of this blog and sharing a journey, I also thought a recipe review of a recipe I found at weightwatchers.com might be welcomed.

I love chicken salad. If it’s made right. I love their to be chunks of chicken. I don’t like it too creamy. I love for it to have a subtle burst of sweet and some crunch. So when I saw the Tex Mex Chicken Salad recipe on the website, I knew that I had to try it.

1 1/4 pound of cooked chicken (I used chicken breasts)

1/2 cup mayo

1/4 cup sour cream

1/2 tsp. cumin

1/4 tsp. chili powder

1 small red pepper

1 small green pepper

15 1/4 oz. canned yellow corn drained

1 cup canned black beans drained and rinsed

In a medium bowl combine mayo, sour cream, cumin, and chili powder. Next stir in chicken, peppers, and corn. Mix Well. Fold in beans.

Cover and chill at least 2 hours.

Serves 6 with 1 cup per serving.

Weight Watchers Points Plus – 6 Points

We chose to have ours with wheat buns and made it a sandwich. This ended up making more like 12 servings because you couldn’t fit an entire cup on one bun. It was so good and so worth it. The corn adds the perfect burst of sweetness and the spice was actually just right for me. The beans were good, I could have left them out and been ok with it, but I know they added some good nutrients and I need and they made it to be a really filling dish. The peppers added that little bit of crunch I really desire in my chicken salad. This is definitely another way to liven up that boring old chicken! Chicken is such a versatile staple and if you are being health conscious and not a vegetarian, you are more than likely eating a lot of chicken, if you aren’t please tell me your secret.  But I do hope you try this recipe and enjoy it as much as we did! It has definitely made it onto the regular rotation of meals to prepare. My teenager who doesn’t like chicken salad said he really liked it. That’s always a win in my book!

PS the plate with two sandwiches was for the teenage boy, not for me! I promise!
