So in Nashville one of the perks of working downtown is Food Trucks! And when I can get out of the office for some lunch I love to hit up restaurants and food trucks that are different. A couple weeks ago I hit up this truck!

50/50 burger. It’s beef and bacon and just really right in all the ways that bacon can be!
Not being able to eat beef for a bit I went this frightening concoction that had chicken as the main protein being enhanced and brought to life by the bacon!
Perks of downtown working definitely include the food. If you visit downtown Nashville be sure to check for food truck locations and hit them up. It’s definitely worth it!
So I live in Nashville and I have since I was a young girl. And one of the things I have never tried is Nashville Hot Chicken. It has started to become a famous thing. I’ve heard there are restaurants all over the country that are coming up with their own recipes and their own versions.
Well as I said I had never tried it and thought that it should be done. Also never tried chicken and waffles. This had to be done as well. So my honey took me to his favorite hot chicken joint.
Pepperfire Hot Chicken in East Nashville. We ordered up our chicken. My honey went with his traditional 3 piece and I did the chicken and waffles.
So let me say this. The hype is real and it’s for a reason. I’ve not been a spicy anything fan ever. But I’m “warming up” to the idea. Haha get it! Anywho I will say this as well. The spicy of the chicken combined with the sweet of the waffle and syrup was the perfect combination and is now probably one of my favorite foods. I wasn’t sure what to expect from this combo but it was great. The spice levels are tricky and I will be honest I got the lightest amount of spice they had, with their actually being spice and well I couldn’t and wouldn’t dare go hotter. But man it was an awesome experience and if you are coming to Nashville or you happen to see it on a menu near you, give it a shot. Really you won’t regret it. Just start with the lightest spicy. Use caution my dears!
So on my girl’s night a while back we finished our shopping fun with an amazing dinner at Virago in downtown Nashville. I love that my hometown is getting so many amazing restaurants and getting quite the reputation for culinary experiences.
I wish I could tell you what this cocktail was but I wanted something fun and non-alcoholic (I was driving) and our wonderful bartender made this for me and it didn’t have a name. But man it was good.
Miso soup is always a hit. And their’s was no joke. Up there with my favorite.
Edamame is one of my favorite treats.
Duck confit bowl. All I can say is wow!
Miso cauliflower. Of everything that I had that night this was literally my favorite. It was misorific!

All in all we had a fabulous evening! The food was really great. The company was even better and who knew cauliflower could be so amazing!

Happy is such a subjective term. I am a very simple woman. I would say there are those in my life including my fiancé and my son who would say that I’m almost child like. I get happy by a sunny day or a snowy day or a rain day when I can wear my rain boots and jump in puddles.

These are just a few of the things that make me happy. Being happy is a choice. It’s not always easy but you can choose it. Go make yourself happy today. That’s my plan!
I love food. Obviously. But we do not attend fancy places very often. I was very lucky to be invited to a lunch at Etch.
Our appetizer was Roasted Cauliflower with truffled pea pesto, salted almonds, feta dip.
The feta dip was a surprise quite tasty and the cauliflower is something I need to try and do at home. I think that my men who only eat asparagus would even like this dish and of course gluten free.
They did not offer any particular type of side salad. However they did offer a small version of their signature Etch Salad consisting of fennel, green apple, arugula, radicchio, blue cheese, walnuts, and a champaign vinaigrette.
I have to be honest and say that I don’t normally like fennel or blue cheese. Or maybe I just never had them prepared well but my oh my this salad was bite after bite of joy. The dressing was that of dreams.
For the main course Catfish with walnut red bell pomegranate sauce, fiery strawberry preserve, lime crema, pickled onion, pumpkin seeds and greens.
Every bite and every sauce was unbelievably tasty. The number of sauces on the plate may have been a bit much for some and I will tell you that the strawberry preserve was by far my favorite. Having the greens on top was interesting and I think one of those things they do to make it look good rather than for flavor. But I will say that every bite was delish.
And finally the dessert. Peanut Butter panna cotta. There are no more words needed!
Oh the honey cream and the apples. Every bite was amazing. What a fun and wonderful lunch.
